BACKGROUND

Much of the rise in Veganism has been related to concerns about animal welfare and the environmental impact of intensive animal rearing. Many consumers are changing their acceptance levels of the enabling technologies and continuing to evaluate and adopt the new technologies that this would require​.

KEY SUCCESS CRITERIA

• Commercially scalable
• Competitive costs to matching ingredients
• Same or better flavour than animal derived ingredients
• If claims are to be made on environmental impact, the energy use and waste generation must be an improvement on current rearing methods and end to end costs
